Our Heritage Breed - The Shropshire Breed

Our heritage breed sheep being The Shropshire Breed originate from the counties of North Staffordshire and Shropshire, in the West Midlands region of England. Shropshire sheep are known for their hardiness and adaptability, making them well-suited to various types of farming environments. They are also known for their meat, which is lean and flavorful, and their wool, which is soft and fine. They were once one of the most popular breeds in UK, but as the farming industry shifted to more industrialization, the numbers of Shropshire sheep significantly declined. Nowadays, they are considered a native breed, and there are still some farms and organizations working to conserve and promote the breed .... including ourselves .... as obviously it originates from our area of the Peak District and the hills of North Staffordshire.

Grass Fed Lamb

Grass-fed lamb refers to lamb that has been raised on a diet of mostly grass and other forages, rather than being fed primarily with grain-based feed. This type of lamb production is considered more natural, as it mimics the diet that sheep would have in the wild.

5 Super easy ways to cook Troutsdale Farm Lamb chops

Here are our 5 different recipes for lamb chops:

Grilled Lamb Chops:

Season lamb chops with salt, pepper, and your choice of herbs (such as rosemary or thyme).
Heat a grill to high heat and grill lamb chops for 3-4 minutes per side, or until desired doneness is reached.

Pan-Seared Lamb Chops:

Heat a large skillet over medium-high heat and add a bit of oil.
Season lamb chops with salt, pepper, and your choice of herbs.
Add lamb chops to the skillet and cook for 3-4 minutes per side, or until desired doneness is reached.

Easy Marinated Rosemary and Garlic Lamb Chops:

In a small bowl, mix together chopped rosemary, minced garlic, olive oil, salt, and pepper.
Rub the mixture onto both sides of the lamb chops.... leave for as long or as little as you like or have time for!
Heat a skillet over medium-high heat and add a bit of oil.
Add the lamb chops to the skillet and cook for 3-4 minutes per side, or until desired doneness is reached.

Here is a recipe for a simple lamb chop dish with a red wine sauce:

Ingredients:

8 lamb chops
Salt and pepper
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup red wine
1 cup beef broth or stock
2 tablespoons butter
2 tablespoons chopped fresh thyme

Season the lamb chops with salt and pepper.
Heat the olive oil in a large skillet over high heat.
Add the lamb chops and cook for 3-4 minutes per side, or until desired doneness is reached.
Remove the lamb chops from the skillet and set aside.
Add the onion and garlic to the skillet and cook for 2-3 minutes, or until softened.
Add the red wine and beef broth to the skillet, and bring to a simmer.
Cook for 2-3 minutes, or until the sauce has reduced by half.
Stir in the butter and thyme, and cook for 1-2 minutes, or until the butter is melted.
Return the lamb chops to the skillet and spoon the sauce over them.
Serve immediately and enjoy!

Note: You can add or remove some of the ingredients according to your taste.

BBQ Lamb chops

One of our absolute favourite new ways for cooking on the BBQ

We think in the UK the lamb chops often gets overlooked for a BBQ - in fact to be honest, until we started to produce our own lamb we have never had a lamb chop on a BBQ! We get the usual steaks and sausages and beefburgers .... BUT lamb chops??!!

Well we tried them one day - super easy - super delicious - and the BBQ really takes the flavour of our grass fed heritage breed lamb to a different level - absolutely delicious!!

Here is a basic recipe for barbecuing lamb chops:

Ingredients:

8 lamb chops
Salt and pepper
2 cloves of garlic, minced
2 tablespoons olive oil
2 tablespoons chopped fresh herbs (such as rosemary, thyme or mint)

Instructions:

Season the lamb chops with salt and pepper.
In a small bowl, mix together the garlic, olive oil, and herbs.
Brush the lamb chops with the herb mixture.
Get your barbecue to medium-high heat.
Grease the grill grates with oil to prevent sticking.
Place the lamb chops on the grill and cook for 3-4 minutes per side, or until desired doneness is reached.
Once the lamb is cooked to your liking, remove it from the grill and let it rest for a few minutes to allow the juices to redistribute.
Serve the lamb chops with your favorite sides and enjoy time with your family or freinds!

Note: Lamb chops cook quickly, so be careful not to overcook them. Also, you can use different marinades or herbs to add more flavors to the lamb chops.

Easy Simply Bank Holiday BBQ with Troutsdale Lamb chops and steaks from the Peak District

It's the Bank Holiday - the sun is shining - its BBQ time!

We've had a very busy weekend ..... and it only Saturday!!

With a busy changeover on Friday, doing some sheep work and silaging - whilst the sun is shining (especially after all rain we have had over the last few weeks! .... it has been busy one!!

When you are busy and the sun is shining we like to eat outside and BBQ - but we have not got huge amount of time for a fancy BBQ - sometimes we just want an easy tea!

This is our go-to easy BBQ - with some of our lamb out of the freezer ( no we dont want to go trecking into town to buy - its too hot, we aint got time - but we still want a BBQ.

Here we are using lamb chops, and we also had some lamb leg joints cut into steaks to - for our BBQ lamb boxes.

We simply get them out of the freezer that morning - cover them in very simple marinade of

olive oil (it has to be Irakilis's olive oil from his own olive tree farm in Greece - we get this from The Lazy Trout in Meerbrook where they also have our lamb on the menu too!
a little garlic out of the kitchen garden
Rosemary out of the the kitchen garden
a sprinkling of sea salt
and a little chopped onion

then just cover and leave to thaw out at room temperature - whilst we get on with the days jobs on the farm

When we are ready - we light up the charcoal BBQ - then put on the chops and leg steaks - and cook for a few minutes each side

On a 'keeping it simple,quick and easy night' .... we just serve with a simple salad dressing in Irakilis's authentic greek olive oil , with slices of cucumber and tomato out of the green house

The meat is really succulent, tender and flavourful done like this - this is now one of our favourite ways to eat lamb chops - why dont' we think of them more often for a BBQ?!

Then we can eat, relax ..... and enjoy our Peak District views ..... and one amazing sunset!

Alderton Winston Whopper Ram

Shropshire Breed ram

We purchased Alderton Winston Whopper (pictured left as a ram lamb) as ram lamb in 2015 from Pippa and Peter Geddes from the Alderton Flock of Shroshire Sheep - as many of you know this is a well respected flock in the breed society from a Signet recorded flock.

We first saw him whilst he was being shown at Burwarton Show - this is a very popular one day show - and they have a very strong class of Shropshire sheep there which we had gone to look at. Alderton Winston Whopper came 2nd in a very strong class of 13 ram lambs!

Due to illness - it wasnt until November that could go and pick him up from Pippa and Peter (above) - we drove down to Alderton Farm in Shropshire and they kindly showed us around their lovely farm and we got to see some lovely sheep grazing in rich pastures (below)

We also got to spot his mother in the flock too! (see below)

He soon settled .... and was very friendly .....

And he soon started to spot where the girls were .....

And to go on .... woo the girls .... and perform his job ....

As he grew ... he settled in well with our other rams - he really is gentleman ram to look after - being very docile and friendly, but always able to perform without any problems. We have kept some daughters off him and he produces excellent lamb for the table.

International Women's Day - discover a few in our Peak District area

1) Chatsworth House & gardens

The Dowager Duchess of Devonshire - she started the development of the commercial side of Chatsworth and raising money for the estate - as well as starting the Children's Farm and Farm Shop "to explain to children that food is produced by farmers who also look after the land and the the two functions are inextricably mixed" - there is a more obiturary in the Daily Telegraph which highlights some of the more interesting parts of her life there are also a number of books she has written. Chatsworth opens again from March.

2) Haddon Hall - Jane Eyre
Haddon Hall with its house and grounds has played host to no less than 3 versions of 'Jane Eyre'! Screen credits also include "Elizabeth", "Pride & Prejudice", The Other Boleyn Girl" and "The Princess Bride". This medieval hall is a great place to visit.
Haddon Hall is probably the finest example of a fortified medieval manor house in existence.
Avoiding fire; warfare; family misfortune and changing fashions, little has changed over recent centuries and Haddon provides a unique view of early English life and history
Opens again from March.

3) Emma Bridgewater Pottery

Emma Bridgewater Pottery is now world famous - this British ceramics was founded in 1985, owned and run by Emma Rice née Bridgewater and Matthew Rice. Noted for their polka dot design among others, Emma Bridgewater specialises in pottery with motifs drawing on techniques stretching back over 200 years. The company is one of the largest pottery manufacturers based entirely in nearby Stoke on Trent (heart of the ceramics industry) in the UK.

In 2016, Emma Bridgewater was made President of the Campaign to Protect Rural England . She is also a Patron of the Heritage Crafts Association

Emma Bridewater factory shop in Stoke on Trent is less than 30 minutes drive away - where you can purchase seconds and great bargains, as well as enjoy their cafe and factory tour to see the pottery actually being made, and it is also a great place for painting your own piece of pottery and is also well set up for children painting pottery too.

4) National Memorial Arboretum - with it's Women’s Land Army and Women’s Timber Corps memorial

We are very proud that the National Memorial Arboretum is in Staffordshire - During the war years, over 240,000 young women joined the Women’s Land Army (WLA) and Women’s Timber Corps (WTC). Many of these young girls were only 17 years of age and it often meant living in the countryside for the first time. They were trained in farming and forestry skills and through their combined efforts, Britain’s crucial food and timber supplies were met.

The Staffordshire Women’s Food and Farming Union has campaigned and raised funds to provide a fitting tribute to honour and commemorate the women’s wartime work. Many of the donations have come from the Land Girls and Lumber Jills themselves, such is their feeling of pride in the new memorial.

The WLA Tribute is a bronze sculpture created by Staffordshire sculptor Denise Dutton and is based on a WWII WLA recruitment poster. Its figures are set upon a sandstone plinth.

6) Nicholson Museum & Art Gallery Leek - The Bayeaux Tapestry - Elizabeth Wardle

It was the idea of Elizabeth Wardle to make the replica Bayeux Tapestry, now on display in Reading Museum. She was a skilled embroiderer and a member of the Leek Embroidery Society in Staffordshire. Her husband, Thomas Wardle was a leading silk industrialist. Elizabeth Wardle researched the Bayeux Tapestry by visiting Bayeux in 1885. The Society also based the replica on hand-coloured photographs of the tapestry held by the South Kensington Museum, now called the Victoria & Albert Museum, London. The aim of the project was to make a full-sized and accurate replica of the Bayeux Tapestry "so that England should have a copy of its own".
The replica Bayeux Tapestry was first exhibited in the Nicholson Institute in Leek in 1886. Over the next ten years the tapestry was put on display in towns and cities across Britain and it even travelled to Germany and America.

Today the Nicholson Museum & Art Gallery dominates the skyline of Leek's historic Peak District market town and today is home to a collection of impressive oil paintings, ceramics, local history and a fine selection of the famous Leek Embroideries.

7) Peak District National Park - First Woman Chair of the Peak District National Park ....

Lesley Christine Roberts - a local lady on our Local Parish Council and good friend..... has done alot of work for the Peak District National Park Authority and became the first woman Chair of the Peak District National Park Authority

It's coming up to Pancake Day - but don't forget the Staffordshire Oatcake!

Unique to the areas of Staffordshire (and Derbyshire) - the Staffordshire Oatcake is one of our favourite 'fast foods' at Troutsdale Farm Holiday Cottages in the Staffordshire Peak District - our regional dish and unique to this area.

A brief history

18th Century

The Staffordshire Oakcake is THE original 'Potteries' fast food!
Dating back to the 18th Century when it was a staple diet of the potteries folk.
In the long hard winters farmers grew oats, rather than wheat and so this simply dish would be baked on bakestones for family and farm workers - and possibly eaten with lard, fat or cheese.

19th Century

A cottage industry sprang up from the many men and women working in the potbanks making the famous Staffordshire Pottery.
The older women would take over the baking of the Oatcakes, often making more than was needed and taking them in baskets to sell in the markets and the streets.

20th century

The more successful bakers built brickrooms in their yards to bake the Oatcakes from and their front room became the shop front, selling the Oatcakes through the sash windows.

Current day

In years gone by the Staffordshire Oatcake was so popular as people lived locally, shopped locally and used the local public houses and the local Oatcake shop.

With supermarkets came the all the new and exotic foods to try and so to some the popularity of the Oatcake and people also had more money, public transport improved and the car was more available to people - which did have an adverse affect on the humble oatcake with many street shops closing and bakers retiring.

However the more recent interest in fresh produce and where their food comes from and an understanding how it is made locally with all its traditions .

You will often find that the good folk of Staffordshire that move away take piles of oatcakes with them back - as you can freeze them - and they make a such good handy 'ready meal' ... although you can now order locally made ones from the internet too!
